1. Fruit.  Fruit of every kind is popping up all over my pin feed.  I’m not complaining- my obesssion with a juicy fruit is definitly being fulfilled appropriately.  These summer months falling upon us provoke the sweetest fruits of the season providing tons of creative recipes to go on my ‘must try soon’ list.  Among my favorite?  Stone Fruit Slaw courtesy of Epicurious  - totally fit for a summer gathering- I’m thinking this summer gathering should involve a bbq and some kind of frosty drink.  Another favorite uses prime seasonal berries in a Strawberry Chipotle Jam so sweetly shared by Tide and Thyme.  This looks and divine- and probably smells so delicious as it is being made.  What a perfect way to adorn my morning wheat toast!

2. Eggs.  An eggg-cellent source of lean protein, and can practically be made any way you please.  I’ve heard of some crazies that don’t prefer the taste of eggs.  What?  Are you CRAzy? Must be. I love them- probably because breakfast food is on the top of my list of favorite foods.  I could eat it for every meal.  My top three for this week?  Spinach, Feta, and Sundried Tomato Egg Sandwich  from Smells Like Home.. Eating Well’s Potato, Mushroom, and Asparagus Hash, and lastly (but not least!) Mexican Baked Eggs from Kayln’s Kitchen.  Good Golly- for sure, without a doubt on my list to try.  Mexican Eggs.. nothing beats it.  Can someone get me a corn tortilla?

3. Granola. Yet another breakfast (or snack) food for you.  The possibilities are endless with this oatmeal mixture- and when you make it yourself you control the ingredients that go into it, which in turn can keep the fat calories in check- something you have to watch out for when consuming granola- totally healthy, but in proper protions.  Prevention RD’s Sweet & Salty Olive Oil Granola Clusters sound right up my alley.  Recipe has been printed and is waiting patiently for the making.

4. Tacos. I love tacos- and you can pretty much stuff anything in a tortilla and it will be good- and you can call those tacos.  The ease of Crockpot Chicken Tacos is a plus, and  Cumin-Spiced Mahi Mahi Tacos would make a light dinner for the upcoming warm evenings of Texas summer. Not to mention an easy dose of the recommended 3 servings of fish per week. 

5. Burgers. Pinterest was totally in tune with my tastebuds this week- hello juicy burgers.  Summer offically starts with first use of the grill- and what do you think you when you are grilling? Burgers..Or chicken.  But chicken is weird- so it is burgers for me.  Edible Perspective has the right idea with her Sweet Potato and Black Bean Burger.  Holy Gracious- gimme some of that! Last night’s dinner was a true winner with How Sweet Eats’ Tilapia Burger.  I ended up eating what was left of the watermelon and avocado salsa with a spoon while my Fireman did the dishes.  We make a great team.
