Zucchini & Tomato Pasta with Creamy Lemon Sauce

I think I may have developed one of the most simple meals ever here with this pasta dish. 

Not meaning to blow my own horn or anything. 

Veggies cook up in a flash over a hot skillet.  Fast except that I spent a total of 6 minutes give or take a few seconds caramelizing my onions because I REALLY like the flavor of sweet browned onions. 

Probably the most labor intensive part about the meal prep. 

Oh, and my sauce took less than 12 seconds to make.  I didn’t even cook it.  Nonfat Greek yogurt makes a super creamy base for my lemon-parmesan sauce. 

I reserved a little of my pasta cooking water to loosen up the sauce if it got too thick when I mixed it with my whole wheat skinny spaghetti noodles- a little tip I picked up from watching the 30-Minute Meal Queen, Rachael Ray..

May I just point out that the so-called 30 minutes meals tend to take up more than their 30 minute allotment, and utilize every single pot/pan/dish in my kitchen.. and then some. 

I love the girl- but I just can’t do the 30 minute meals very well.  I vote to change the name of her show to something more like 47 Minute-Meals.  Thats about the average time spent on my end.  Mostly because I have a Fireman that sits at my feet to watch me cook while playing on his iPad- seeking every desire to share with me what he’s found on Craig’s List.

Dude.. I don’t have time to ‘check out’ the awesome package of pool supplies for $87. 

AND might I mention we don’t even have a pool.

Need a little protein in your life?  This MM dish can easily turn into something more protein dense (not that it was lacking at all.. the Greek yogurt and whole wheat noodles provide the majority at about 19 grams protein per serving.)

Add cooked sliced chicken breast, seafood, or even some steak!  The nutty parmesan and tang from the lemon juice and zest would go well with any of the mentioned above.

However you do it.. it is still dinner on the table in under 20 minutes. 

How can you deny me a pat on the back for this one?  Who says it cannot be done in under 30 minutes and done with less than half of your pan collection.

 

 

Zucchini & Tomato Pasta with Creamy Lemon Sauce

Yield: 4 servings

Zucchini & Tomato Pasta with Creamy Lemon Sauce

Ingredients

  • 8 ounces whole wheat thin spaghetti
  • 2 teaspoons olive oil
  • 1 small sweet Vidalia onion, thinly sliced or chopped
  • 3 medium sized zucchini, cut thin on the diagonal
  • 2 cloves garlic, minced
  • 1 pint cherry tomatos, sliced in half lengthwise
  • 1/4 cup chopped fresh basil
  • 1/2 cup nonfat plain Greek yogurt (such as Fage)
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon grated lemon zest
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoons crushed red pepper

Instructions

Bring a large pot of water to boil. Add pasta, and cook according to package directions, omitting salt and fat. Drain pasta, reserving 1/4 to 1/2 cup pasta cooking water. Keep warm.

In a large skillet, heat the olive oil over medium-high heat. Add the onion and saute for 4 minutes until golden and fragrant. Add garlic, cook stirring constantly for 30 seconds. Add zucchini and saute until slightly wilted, about 5 minutes. Stir in the tomatoes and cook for another 2 minutes, until softened.

Meanwhile, in a large bowl, stir together yogurt, parmesan, lemon zest and juice, red pepper, salt and pepper. Add the reserved pasta, adding in the pasta water as needed.

Divide pasta evenly among four bowls. Serve with 1/4 of the vegetables, sprinkle each serving with 1 tablespoon chopped basil and additional lemon juice as desired.
