Blueberry-Pomegranate Smoothie

Oh, Monday.  How you pain me sometimes.  I don’t want to blame my sleepy eyes- because I did in fact go to bed at a decent hour last night. 

It’s not a lack of desire to go work, either.  I love my job. 

Really.  I do.

Maybe it is simply finding something quick and easy to start my day with.  Saturday and Sunday I leisurely go about my morning, really contemplating what I want for breakfast- mainly because I have the time to contemplate..and take advantage of it. 

Every time.

Not Mondays.  Nor any other day of the week.  The dramatic length of time it takes me to get ready makes it difficult for me to make enough room to fit in a decent breakfast. 

What?  I must make sure that each strand of hair is volumized to the max and strategically placed well on my head.

Then the extra 7-12 minutes it take to accessorize.  No.  I’m not kidding.  The mass of necklaces, bangles, and watches that I have to dig through make for crazy finger abilities to get multiple knots untied in record timing. 

Most of the time I have to plan my accessories when I plan my outfits. 

The night before. 

But, I can take 4 minutes to process this smoothie  if I plan my outfits/jewelry out ahead of time.

..and leave the dishes for my Fireman to clean up.  He doesn’t mind most of the time.  Plus, he is usually up to tell me goodbye due to the noise I make when sifting through my jewelry drawer.

He is so wonderful.

Not too sweet, not to crazy filling.. perfectly portioned,and supurbly easy to fit in a serving of fruit. 

Thermos full of smoothie and I’m out the door!


Blueberry-Pomegranate Smoothie

Yield: 2 cups

Serving Size: 1 cup each

Blueberry-Pomegranate Smoothie


  • 1 ripe banana
  • 1/2 cup frozen blueberries
  • 1 tablespoon honey
  • 1/2 cup 100% pomegranate juice
  • 1 cup plain nonfat Greek yogurt (such as FAGE)


Peel banana and cut into chunks.

In a blender or food processor combine banana, blueberries, honey, and juice- process to a coarse puree, about 30 seconds. Add yogurt and mix until smooth.

Pour into two glasses and serve right away, or transfer to an insulated container or mug to take on the go!
