Lunch time got you in a rut? Me too.. Until today. I came across this recipe and I couldn’t bring myself to change it one bit. I contemplated adding in some tomato for color.. skipping out on the additional green onions.. but what am I thinking? This is perfect as is. Perfect for lunch or a light dinner, it will not dissapoint.
My fireman requests me to make this time and time again- so I oblige, mainly because I love this simple salad, too.
And then partly because I love him, a little.
Most of the time I pride myself on being creative and diligent as those bloggers that take pictures after each step during the cooking process (read The Pioneer Woman.. the amazing, talent she is).
This isn’t one of those times.
