3-4 leaves of fresh baby spinach
4 thin half-moon slices of red onion
3-4 thin sliced tomato (such as Roma)
1/4 of a small cucumber, peeled and thinly sliced
1/2 of a fresh or jarred roasted red pepper
2 tablespoons shredded part skim mozzarella cheese
Spread 1 tablespoon hummus on each side of the toasted English muffin. Begin to layer all fresh veggies as desired, and then sprinkle with shredded mozzarella. Top with the other half of the English muffin.
