INGREDIENTS:
Muffins:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon baking powder
2 teaspoons ground cinnamon
1/4 teaspoon salt
1/8 teaspoon nutmeg
1 cup granulated sugar
1 cup canned pumpkin
1/2 cup low-fat buttermilk
1/4 cup packed light brown sugar
2 tablespoons canola oil
1 large egg
1 cup fresh or frozen blueberries
Cooking spray
Streusel:
2 tablespoons all-purpose flour
2 tablespoons brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons butter, chilled
DIRECTIONS:
Preheat oven to 375°. Lightly spoon flour into dry measuring cups; level with a knife. Combine both flours, baking soda, and next 5 ingredients (though nutmeg); stir well with a whisk. Combine granulated sugar and next 5 ingredients (through egg) in a large bowl; beat with a mixer at medium speed until well blended (about 3 minutes). Add flour mixture to sugar mixture; beat at low speed just until combined. Fold in blueberries. Place 12 paper muffin cup liners in muffin cups; coat liners with cooking spray. Spoon batter into prepared cups. To prepare the streusel, combine 2 tablespoons flour, brown sugar, and ground cinnamon in a small bowl. Cut in 2 tablespoons butter with a pastry blender or 2 knives until mixture resembles coarse meal. Sprinkle streusel evenly over muffins. Bake at 375° for 25 minutes or until muffins spring back when touched lightly in center. Remove muffins from pan immediately; place on a wire rack.

I'm the same way – always picky when ordering. They usually wanna roll their eyes :0 These muffins look great. Love the use of buttermilk in them. The streusel topping is making my mouth water.
The directions say to mix both flours, but only one is listed in the ingrdient list…? I made them tonight and my husband said they were delicious, I am just trying to figure out why mine don't look as pretty!

I think I meant to put some whole wheat flour in the ingredients! It's one of those posts I wrote the ingredients in my brain and then transfered to CBroc
