Bad Blogger. Bad, BAD, blogger. BUT- I have a perfect excuse- internship. Oh my Geez- it has been keeping my beyond busy the past several weeks, as I have been finishing up my last assignments and
getting ready to graduate. WHOA..11 months coming, really couldn’t picture the end of this internship thing a year ago, but here I am with less than 2 weeks to go. Now the next hurdle is studying for the National Registery Exam to finalize my process in becoming a Registered Dietitian. (WHOO!)
So, since I have been a bad blogger, I have decided to make up for it with dessert.. a healthier version of the popular, and my personal favorite, Banana Pudding- Yum! Enjoy!
1 (14 oz) can sweetened fat free condensed milk
1 (5 oz) box Instant Vanilla Pudding
1 (3 oz) box Instant Vanilla Pudding
3 1/2 cups fat free or 1% milk
2 tsp Pure Vanilla Extract
16 oz fat free whipped topping
3 medium bananas, sliced
1 (12oz) package Reduced Fat Nilla Waffers
Directions:
In a large bowl, beat cream cheese until fluffy. Beat in condensed milk, pudding mix, cold milk and vanilla until smooth. Fold in 1/2 of the whipped topping. Line the bottom of a 4-quart trifle dish with vanilla wafers. Arrange 1/3 sliced bananas evenly over wafers. Spread with 1/3 pudding mixture. Top with 1/3 whipped topping. Continue with three aditional layers, ending with the whipped topping. Chill before serving.
Serves 16: 1 cup serving

I absolutely love banana pudding…and can eat multiple servings in one sitting…so I should definitely try this lighter version!
