BBQ Chicken Baked Potatoes

BBQ Chicken Baked Potatoes


6 frozen skinless, boneless chicken breast halves
one medium red onion, sliced into rings
1 (16 ounce) bottle barbeque sauce (I used Sweet Baby Ray’s Honey)
1 cup Zesty Italian salad dressing
1/2 cup Cider Vinegar
1/2 cup brown sugar
1/4 cup Worcestershire sauce
2 tablespoons Liquid Smoke
2 tablespoons garlic powder

6 medium baking potatoes

Place frozen chicken in a slow cooker. Layer onion rings over top of the chicken breasts and sprinkle with the garlic powder. In a bowl, mix the barbeque sauce, Italian salad dressing, brown sugar, liquid smoke and Worcestershire sauce. Pour over the chicken.
Cover, and cook 3 to 4 hours on High or 6 to 8 hours on Low. Remove chicken from slow cooker and shred. Place shredded chicken back into slow cooker with the sauce.

During last hour for cooking the chicken, wrap potatoes in foil and bake at 400 degrees for 45-60 minutes.

Split potatoes and add your choice of various toppings..
My favorite, you ask? Bleu Cheese and green onions!

  2. my husband and I both loved this meal. we didn't make it on potatoes but instead used toasted whole wheat buns.

  3. we make these all the time too! My recipe doesn't have the liquid smoke; I'll have to give that a try.
